Sugar Cookie Day

July 9th is Sugar Cookie Day and we decided to bake up some sugar cookies today.   I wanted something fast and easy that wouldn't require rolling out the dough and cutting, so we made Swig Sugar Cookies with yellow frosting.  I found this recipe at Vintage Revivals.  One of the best things about it, you roll the dough into a ball and squish it with a cup, and they taste amazing!


I also made my favorite sugar cookie recipe, that requires you to roll out the dough.  These cookies are soft and light and this recipe can really feed a crowd.  You cream together 1 cup of butter, 2 cups of sugar and 1 cup of sour cream.



 Then you add two eggs and 1/2 teaspoon of vanilla and mix well.  The dry ingredients are 1 teaspoon of baking soda and 1 tsp of baking powder with 5 1/2-6 cups of flour.


Refrigerate the dough until it is easy to handle and then roll out the dough on a clean, floured, surface to 1/4 inch to 1/2 inch thickness and cut out with cookie cutters.  Bake at 350 for 8-10 minutes.  (I don't have pictures yet of the finished cookie because our summer fun on the 9th includes cutting, baking and decorating sugar cookies to eat and to share, but I will update.)

Sour Cream Sugar Cookies

2 c sugar
1 c butter, softened
1 c sour cream
2 eggs
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. pure vanilla
5 1/2-6 cups flour

Cream together the sugar, butter and sour cream. Add the eggs and vanilla, beat well.  Add the dry ingredients and mix.  Refrigerate the dough until easy to handle, then roll out 1/4-1/2 inch thick on a clean, floured surface and cut with cookie cutters.  Bake at 350 degrees Fahrenheit for 8-10 minutes.
